CELEBRATING THE 8th EDITION OF THE ITALIAN CUISINE WEEK IN THE WORLD WITH AGRICHEF PAOLO PASSANO FROM LIGURIA REGION

ITALIAN ENOGRASTRONOMIC TRADITION WITH A LATIN AMERICA TWIST

 

Miami, FL – November 14, 2023 – The Consulate General of Italy in Miami is excited to announce two exceptional culinary events organized in partnership with the Italian Cultural Institure and the Miami Culinary Institute to celebrate the international week of the Italian cuisine in the world.

On Nov. 14th 2023 food experts, critics and professionals will congregate at the recently inaugurated Italian Cultural Institute in Coral Gables to meet the renowned Italian “agri-chef” Paolo Passano from the Liguria Region. The Chef will present his innovative concept and approach to Italian food: a preparation of steeped in centuries-old local and authentic traditions combined with Latin American sensitivities and preferences.

Paolo Passano, Agri Chef  (Agri Chef – La Bilaia) and Doctor of Gastronomic Sciences graduated from the University of Slow Food in Pollenzo (Cn), opened the AgriTurismo and the “Agri Ristorante” La Bilaia on April 17, 2013. His passion for agriculture was born as a child working in the gardens with his grandparents. His parents too passed on to him the love for food by spending summers in Guayaquil (Ecuador) where his mother Angela and father Luigi have 3 award-winning Italian restaurants (Riviera Restaurant). From his personal biography and his inspiring family traditions straddling two continents (Italy and the Americas) Mr. Passano has created his own Italian cuisine (i.e. “cucina dei due mondi” – cuisine of the old and new worlds). The Agrichef will engage in a conversation with food professionals and critics debating the merits of Italian food culture and techniques.  Focus will be on the universal appeal of Italian food thanks to its richness, variety, and healthy savory use of ingredients.

On Nov. 15th, Paolo Passano will teach a masterclass at the beautiful premises of the Culinary Institute of the Miami Dade College. The masterclass will be devoted to his concept of “Dual World Delights: Italian Cuisine with a Latin American Twist”

Chef Passano will be guiding a selected audience of promising young chefs/trainees from Miami Culinary Institute and FIU Chaplin School of Hospitality through the creation of culinary masterpieces. Using traditional Italian cuisine as the foundation, Chef Passano will demonstrate how to infuse Ligurian/Italian dishes with the vibrant flavors of Latin America whilst keeping faithful to the original recipes. The proposed dishes for the masterclass include Latin-Style Fish Carpaccio with Italian Olive Oil, Tropical Maltagliati with Meat Ragu, and Cassava Gnocchi in American Sauce with Cheese and Tamarillo.

Throughout the masterclass, the future chefs will actively participate in the creative process, which will culminate in a tasting session for participants and the audience. This unique event promises to unveil a fusion of cultures and cuisines while honoring the fundamental tenets of Italian food culture.
